Potato Salad

Another dish that does well at picnics is Potato salad and below is a healthier version of this well-loved American picnic staple.

My mouth is watering as I'm writing this- it's one of my favorites!


















Ingredients:
  • 12+ 4 to 5 inch New potatoes (our preference)
  • 4- 5 celery stalks- chopped
  • 1 large sweet white onion- chopped
  • Fresh Dill (dry dill works also)- chopped
  • Veggie Mayo
  • 1 clove garlic (or dry garlic) to taste
  • Sea salt to taste
Steam or boil the potatoes and cool.  Mix potatoes with chopped celery, onion, dill and garlic and fold in a few tablespoons of veggie mayo (our preferred brand pictured below & found in refrigerated section of health food store).  Mix well and serve or chill and serve, if you can wait:)

Although I listed salt as an ingredient, I have found the mayo and herbs provide plenty of flavor.
